 The concept of originated somewhere around 1000 BC and began either with fine fruits or pure spices. Lassi is an ancient smoothie and indeed the first yoghurt smoothie in the world.


(Also lassi is the name given to a yoghurt based Indian drink to cool the effect pf hot summers.) 


It is originally from the lands of punjab and multan in India. Yoghurt is blended with water; having additives like fruits, jaggery or sweeteners . The major variants of Lassi are sweet and salted.


Traditional lassi (also known as salted lassi,or simple sweet lassi) is a savory drink sometimes flavoured with ground roasted cumin while sweet lassi on the other hand is blended with sugar or fruits instead of spices.


In dharmic religions, yoghurt sweetened with honey is used while performing religious rituals. Less common is lassi served with milk and topped with a thin layer of clotted cream.


Dry fruits are added for the best taste For good fragrance cardamom and rose essence is added to make it unique. 


Lassis are enjoyed chilled as a hot weather refreshment,mostly take with lunch. This drink really helps to cool down when the summer sun is beating hard against the dusty streets.


Lassi is a part of a daily diet of many people. It is served as a part of all meals. Most of the people end their meal with a glass of lassi. It can be taken at any time of the day but is mostly served in afternoon and evenings.


MAKING OF LASSI

▪1¾ cups of plain whipped yoghurt
▪6 ice cubes crushed
▪1½ cups of ice water
▪2 teaspoons of white sugar
▪4 cardamom 
▪2 teaspoons of rose essence 


● In a blender, blend the yoghurt, ice, water and sugar mix it well until mixture become frothy. Add cardamom and blend it again and add the rose essence in it , then pour the mixture over ice cubes in glases and enjoy in hot summers.


DIFFERENT TYPES OF LASSIS VARIANTS 


▪Spicy Mint Lassi : made with a blend of yoghurt, water, fresh mint leaves, spices and salt.


▪Strawberry Lassi : made with a blend of yoghurt, water and fresh strawberries 


▪Mango Lassi : made with a blend of yoghurt, water and fresh mangoes (concentrated mango flavour or mango powder)


▪Chocolate Lassi : made with a blend of yoghurt, water and chocolate syrup


▪Orange Lassi : made with a blend of yoghurt, water and orange (fresh or syrup)


▪Papaya Lassi : made with blend of yoghurt, water and papaya and honey. 


▪Caramel Lassi : made with blend of yoghurt, water and caramel
